Congratulations on finding the
Veggie of the Week - Capsicum!
It’s time to discover what’s at the end of the rainbow - with our fun stuffed capsicums! They are a little pot of gold! !
Shopping List:
- Beef mince (or any other meat mince of your choice!)
- Brown Rice
- Ground cumin
- Chilli powder
- Salt
- Olive Oil
- Grated Cheddar Cheese
- Red Onion
- Garlic
- Can of diced tomatoes
- Spring Onions
Delicious Stuffed Capsicums
Ingredients:
- 450 grams of meat mince
- 1 cup cooked brown rice
- 2 tbls. olive oil
- 1/2 red onion, chopped finely
- 2 cloves garlic, minced
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1 cup canned diced tomatoes
- 1 cup grated cheddar cheese
- Spring onions to decorate.
Method:
Preheat oven to 200 degrees C.
Cut the tops off the capsicums and scoop out the seeds,
Place on a tray lined with baking paper and put in the oven (empty) for twenty minutes while we get started on the filling.
Heat the oil in a large pan over medium-high heat, and add onions until softened.
Add the ground mince, garlic, spices, and salt, and cook for about 10 minutes.
Add the tomatoes, and cook a few more minutes while stirring.
Add rice once blended.
Remove the capsicums from the oven, and add mince mixture until they’re filled to the top.
Place back in the oven, and cook for 20 minutes.
After the 20 minutes is up, sprinkle cheddar evenly on top and place back in the oven for 10 minutes.
Finally, for a bit of magic, add in the green end of the spring onions as a handle, and you’ve got a deliciously fun pot of gold!
